Tomato salsa.

6 tomatoes, deseeded and finely chopped
½ cucumber peeled and finely diced
½ red onion finely diced
½ clove of garlic finely chopped
1 tablespoon of fresh parsley chopped
2 tablespoons of balsamic vinegar
8 tablespoons of olive oil
Salt and fresh black pepper

The slowest part of this recipe is the preparation, once this is done simply mix all the ingredients together and season to taste. This salsa is also great with grilled fish and chicken.
